Fragrant Thai Green Pork Curry
- 500g pork fillet, cut into thin strips
- 2 tbsp groundnut oil
- 2 tbsp quality Thai green curry paste
- 1 yellow capsicum, diced
- 350g green beans, chopped into lengths
- 270ml coconut milk
- 1 tbsp chopped Thai basil
- Heat half the oil in a frying pan and stir-fry the pork for 8 mins, or until golden and cooked through. Remove from the pan and set aside. Add the remaining oil to the pan and stir-fry the curry paste for 1 minute, or until fragrant.
- Toss in the capsicum and green beans, stir-fry for 2 mins, then return the pork to the pan with the coconut milk and half a can of water. Simmer for 5 mins to thicken, then season well, stir through the Thai basil and serve with sticky rice. Easy!
