Fried Halloumi with Minty Couscous
- 250g couscous
- 1 tsp ground cumin
- 1 chopped red onion
- 2 chopped fresh tomatoes
- 1 chopped garlic clove
- 25g chopped mint leaves
- 1 lemon, juice and zest
- 2 tbsp olive oil
- 200g halloumi, sliced into strips
- 1 tbsp seasoned flour
- Add the couscous to a bowl and stir through the cumin, onion and tomatoes. Pour over enough water to just cover, then set aside to soak. Meanwhile, mix the garlic, mint, lemon zest and juice, and 1 tbsp of olive oil.
- Heat the remaining oil in a frying pan. Dust the halloumi in seasoned flour and cook for 4 mins on each side, or until crispy and golden. Drain on kitchen paper. Fluff the couscous with a fork, stir through the cheese and mint dressing, and serve immediately.
