Fried Rice with Ham and Pineapple
- 1 tbsp olive oil
- 1 sliced red onion
- 200g cooked ham, cut into 1cm chunks
- 500g cooked basmati rice
- 1 tsp allspice powder
- 200g peas
- 400g pineapple chunks
- 3 tbsp soy sauce
- 15g chopped coriander
- Fry the onion in the oil for 2 mins until softened and golden. Remove from the pan and set aside.
- Toss the ham pieces into the pan and cook for 5 mins until golden. Stir through the cooked rice and allspice, 50ml of water, the peas, onion and pineapple pieces. Cook for 5 mins to heat through, then stir in the soy sauce and coriander before serving as a flavourful side dish.
