Fried Rice with Ham and Pineapple

  • 1 tbsp olive oil
  • 1 sliced red onion
  • 200g cooked ham, cut into 1cm chunks
  • 500g cooked basmati rice
  • 1 tsp allspice powder
  • 200g peas
  • 400g pineapple chunks
  • 3 tbsp soy sauce
  • 15g chopped coriander
  • Fry the onion in the oil for 2 mins until softened and golden. Remove from the pan and set aside.
  • Toss the ham pieces into the pan and cook for 5 mins until golden. Stir through the cooked rice and allspice, 50ml of water, the peas, onion and pineapple pieces. Cook for 5 mins to heat through, then stir in the soy sauce and coriander before serving as a flavourful side dish.
