Fried Steak
- 2 x minute steaks
- 150g flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 250ml buttermilk
- 1 egg, beaten
- 1 tbsp hot sauce
- 2 cloves of garlic, crushed 4
- tbsp veg oil
- 200ml warm milk
- 1 tsp horseradish sauce
- Salt and pepper
- Buttered greens, to serve
- Kick things off by pounding the steaks in a plastic zip-lock bag until they are 4mm in thickness. Put 120g of flour in a shallow bowl, stir in the bicarbonate of soda and baking powder, along with 3⁄4 tsp of salt, and 1 tsp of black pepper. In a separate bowl, mix the egg, buttermilk, hot sauce, and crushed garlic.
- Dip your flattened steaks into the flour mix, then in the milk and egg mixture, and then again into the flour. Fry in the hot oil for 3 minutes on each side, or until crisp and golden brown. Drain on kitchen paper.
- Make your American-style gravy by whisking the remaining flour into the oil, scraping the pan to bring the solids into the gravy. Stir in the milk, bring up to a simmer, and cook until thickened. Stir in the horseradish, season well, and serve with your fried steaks and buttered greens.
