Garlic and Herb Scallops
- 12 scallops, shells and corals removed
- 3 tbsp olive oil
- 1 crushed garlic clove
- 1 tsp chopped parsley
- Squeeze of lemon
- Wash the scallops and pat dry, then place in a mixing bowl and gently mix with the oil, garlic and parsley. Place in the fridge for half an hour.
- When ready, heat a large frying pan until very hot. Just before cooking, lower the heat and place the scallops in the pan to cook for 90 seconds on both sides. Serve immediately with a good squeeze of lemon.
