Garlic and Herb Scallops

  • 12 scallops, shells and corals removed
  • 3 tbsp olive oil
  • 1 crushed garlic clove
  • 1 tsp chopped parsley
  • Squeeze of lemon
  • Wash the scallops and pat dry, then place in a mixing bowl and gently mix with the oil, garlic and parsley. Place in the fridge for half an hour.
  • When ready, heat a large frying pan until very hot. Just before cooking, lower the heat and place the scallops in the pan to cook for 90 seconds on both sides. Serve immediately with a good squeeze of lemon.
