Garlic Butter Mussels

  • 1 clove of garlic, chopped
  • 25g butter
  • 1 tbsp chopped coriander
  • 6 green-lipped mussels, cleaned, one shell removed
  • 75g fresh breadcrumbs
  • Salt and pepper
  • ½ lime, cut into wedges
  • Preheat the oven to 200C. Mix together the butter, garlic, and coriander in a small bowl.
  • Place the mussels on a baking tray. Divide the butter between the mussels, sprinkle over the breadcrumbs, and season well with salt and pepper. Bake in the oven for 5 minutes. Serve on a warm plate sprinkled with coriander and topped with lime wedges.
