Garlic Butter Steak with Piri-Piri Chips
- 100g softened butter
- 3 crushed garlic cloves
- 1 sliced spring onion
- 1 tbsp lemon juice
- 2 tbsp chopped parsley
- 2 sirloin steaks
- Olive oil
- For the Chips
- 500g potatoes, unpeeled and cut into chips
- 1 ½ tbsp sunflower oil
- ¼ tsp chilli flakes, cayenne pepper, ground cumin and black pepper
- 1 tsp sweet paprika
- ½ tsp dried oregano
- Mix the butter, garlic, spring onion, lemon juice and a pinch of salt in a food processor and blend. Mash in the parsley and spoon the mixture onto a sheet of baking paper. Roll into a log and pop in the freezer for 10 mins to firm up.
- Heat the oven to 200C and spread the chips onto a large baking chip, then drizzle with the sunflower oil and all the spices. Toss together to coat and bake for 40 mins, turning halfway to ensure crispiness.
- Once the chips are almost done, heat a frying pan and rub the steaks with olive oil and seasoning. Fry for 1-3 mins on each side or to your liking, then add a heaped tbsp of the garlic butter to the pan and baste the steaks thoroughly. Rest on a plate for 5 mins, then serve with the chips and more butter drizzle on top.
