Garlic Butter Steak
- 700g sirloin steak, cut into 3cm cubes
- 450g small potatoes, cut into quarters
- 2 sliced carrots
- 1 red and 1 green capsicum, cubed
- ½ red onion, cubed
- 1 tbsp olive oil
- For the Garlic Butter
- 80g room temperature butter
- Handful of chopped parsley
- 4 crushed garlic cloves
- 1 tsp each chopped rosemary and thyme
- Mix the potatoes, carrots, capsicums and onion in a bowl, season well and toss with the olive oil. Divide the veggies between four 45x35cm squares of foil, then top with the steak pieces.
- Mix the butter ingredients thoroughly and season well, then divide between the steak and vegetables. Wrap the ingredients in the foil to make a parcel, leaving a space for the steam to gather around the steak and vegetables. Grill on a medium heat for about 15 mins, then carefully unwrap and serve with bread or chips.
