Garlic Mushroom Bruschetta
- 1 tbsp olive oil
- 200g shiitake mushrooms, torn
- 100g brown mushrooms, sliced
- 100g portobello mushrooms, sliced
- 1 chopped garlic clove
- 1 tsp butter
- 1 tbsp red wine vinegar
- 4 slices of wholemeal sourdough
- 1 garlic clove for rubbing
- Heat 1 tbsp of oil in a pan and fry the mushrooms with the chopped garlic until browned. Add the butter, vinegar and seasoning, and cook for a few mins more.
- Meanwhile, grill the bread and rub with the garlic clove. Top with the mushrooms, season with black pepper and serve with truffle mayo or pesto.
