Gastropub Burgers

  • 500g quality minced steak
  • 1 diced red onion
  • 1 tbsp chopped capers
  • 1 tbsp chopped cornichons
  • 1 egg
  • 3 tbsp fresh breadcrumbs
  • Small bunch of parsley, chopped
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 4 small anchovy fillets from a tin, chopped
  • Buns, sauces and sides to serve
  • Mix all the ingredients in a bowl and season well. With damp hands, shape into 4 fat patties, then leave to rest in the fridge for an hour. When ready to cook, griddle for 8-10 mins, turning once. Leave to rest for 5 mins, then serve in ciabatta buns with all your favourite sauces.
