Gastropub Burgers
- 500g quality minced steak
- 1 diced red onion
- 1 tbsp chopped capers
- 1 tbsp chopped cornichons
- 1 egg
- 3 tbsp fresh breadcrumbs
- Small bunch of parsley, chopped
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 4 small anchovy fillets from a tin, chopped
- Buns, sauces and sides to serve
- Mix all the ingredients in a bowl and season well. With damp hands, shape into 4 fat patties, then leave to rest in the fridge for an hour. When ready to cook, griddle for 8-10 mins, turning once. Leave to rest for 5 mins, then serve in ciabatta buns with all your favourite sauces.
