Gently Spiced Kale Salad
- Small bunch of parsley, chopped
- Small bunch of curly kale, chopped
- 1 large tomato, finely chopped
- 1 small green chilli, finely chopped
- 6 shallots, finely chopped
- Flesh of half a coconut, scraped and chopped
- 1 tbsp dried fish flakes (optional)
- 1⁄2 lime, juice only
- Salt, to taste
- Add the chopped leaves to a bowl, and add the tomato, chilli, and shallots. Mix well. Add the rest of the ingredients, and mix well with a spoon. Season to taste, and serve as a delicious side to your favourite Southeast Asian dishes.
