Ginger and Garlic Scallops

  • 200g scallops, shells and roe discarded
  • 2 sliced spring onion
  • ½ tsp grated ginger
  • 1 crushed garlic clove
  • 1 tsp sesame oil
  • 2 tbsp dark soy sauce
  • 2 tsp runny honey mixed with 1 tbsp boiling water
  • 2 tbsp dry sherry
  • Pat the scallops dry and fry in a hot pan with the spring onions and grated ginger for 2 mins. Add the garlic, cook for another minute, then remove the scallops from the pan and set aside.
  • Add the soy sauce, sherry and honey to the pan and simmer to reduce by half. Directly before serving, pour the sauce over the scallops. Enjoy!
