Ginger and Garlic Scallops
- 200g scallops, shells and roe discarded
- 2 sliced spring onion
- ½ tsp grated ginger
- 1 crushed garlic clove
- 1 tsp sesame oil
- 2 tbsp dark soy sauce
- 2 tsp runny honey mixed with 1 tbsp boiling water
- 2 tbsp dry sherry
- Pat the scallops dry and fry in a hot pan with the spring onions and grated ginger for 2 mins. Add the garlic, cook for another minute, then remove the scallops from the pan and set aside.
- Add the soy sauce, sherry and honey to the pan and simmer to reduce by half. Directly before serving, pour the sauce over the scallops. Enjoy!
