Ginger and Lime Mackerel

  • 4 whole mackerel, gutted
  • 2 tbsp olive oil
  • 2.5cm piece of ginger, chopped
  • 1 chopped garlic clove
  • 1 tsp soy sauce
  • 3 tbsp chopped parsley
  • 1 tbsp honey
  • 2 limes, zest and juice
  • Paprika, for sprinkling
  • Slash the mackerel 6 times with a sharp knife, then place in a dish and brush with the oil. Mix the ginger, garlic, parsley, soy, honey, lime zest and juice in a bowl, then liberally slather all over the mackerel, pushing into the slits and belly cavity. Cover and marinate in the fridge for 20 mins.
  • When ready to cook, griddle on a very hot pan or cook under the grill for 5 mins on each side, then serve hot with your choice of salad. Delicious!
