Glazed Roast Turkey Crown
- 50g butter
- 2kg turkey crown, on the bone
- 1 tsp five-spice powder
- Roasted vegetables, to serve
- For the Glaze
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- 4 tbsp clear honey
- Preheat the oven to 190C. Smear the butter onto the turkey crown and season with half the five-spice powder, salt and pepper. Place in a roasting tin and roast for 30 mins. Meanwhile, mix the ingredients for the glaze in a bowl, and stir in the remaining five-spice powder.
- Remove the turkey from the oven and liberally brush with half the glaze. Roast for a further hour, glazing again two more times along the way, until cooked through and the skin is sticky. Leave to rest for 20 mins, and reserve the tin juices to make a rich gravy to serve with the meat and roast vegetables.
