Gnocchi-topped Fish Pie
- 350g pre-made gnocchi
- 200ml milk
- 2 tbsp cornflour
- 400g mix of salmon, smoked fish, and prawns
- 4 spring onions, sliced
- 1 tbsp chopped chives
- 150ml crème fraîche
- 1 tsp capers
- 200g peas
- 1 tsp olive oil
- 250g green beans, cooked, to serve
- Pop the gnocchi in a large ovenproof frying pan, cover with boiling water and a pinch of salt, and simmer for 3 mins then drain and set aside. Combine a splash of milk with the cornflour, mix to a smooth paste, then whisk in the rest of the milk. Pour into your frying pan, add the fish mix and the spring onions, and bring to a simmer. Stir until nicely thickened - about 5 mins. Season well, stir in the herbs and crème fraîche, peas, and capers.
- Heat the grill. Arrange the cooked gnocchi on top of the fish and sauce, and brush with oil. Season well, then grill for 5 mins or until the gnocchi is a little bit puffed and golden. Serve with green beans.
