Goat’s Cheese Platter with Pomegranate and Chive
- 150g soft goat’s cheese
- 250g ricotta
- 50g pomegranate seeds
- ½ bunch chives, snipped
- 1 tbsp honey
- 2 tsp red wine vinegar
- Crusty bread, to serve
- Mash the goat’s cheese with the ricotta in a bowl, then spread with a palette knife over a platter or plate. Scatter with chives and pomegranate seeds, and set aside. Meanwhile, stir the honey with the vinegar, and just before serving, drizzle all over the plate. Enjoy with a hunk of crusty bread.
