Goat’s Cheese Platter with Pomegranate and Chive

  • 150g soft goat’s cheese
  • 250g ricotta
  • 50g pomegranate seeds
  • ½ bunch chives, snipped
  • 1 tbsp honey
  • 2 tsp red wine vinegar
  • Crusty bread, to serve
  • Mash the goat’s cheese with the ricotta in a bowl, then spread with a palette knife over a platter or plate. Scatter with chives and pomegranate seeds, and set aside. Meanwhile, stir the honey with the vinegar, and just before serving, drizzle all over the plate. Enjoy with a hunk of crusty bread.
