Greek Fish Roast
- 400g new potatoes, cut into wedges
- 1 sliced onion
- 2 chopped garlic cloves
- ½ tsp dried oregano
- 2 tbsp olive oil
- ½ lemon, cut into wedges
- 2 tomatoes, cut into wedges
- 2 cod or pollock fillets
- Small handful of chopped parsley
- Preheat the oven to 200C. Tip the onion, potatoes, garlic, oregano and olive oil into a roasting tin, season well and toss together. Roast for 15 mins, then give everything a shake and roast for 15 mins more.
- Add the tomatoes and lemon, roast for another 10 mins, then drape the fish fillets on top top and roast for a final 10 mins. Serve hot with lots of parsley scattered over and some lemon wedges for squeezing.
