Greek Lamb Pasticcio
- 1 tbsp veg oil
- 1 chopped red onion
- 400g lamb mince
- 1.5 tsp Mediterranean seasoning mix
- 4 crushed garlic cloves
- 400g tin of chopped tomatoes
- 2 tsp chopped oregano
- 275g macaroni
- For the Topping
- 200ml Greek yoghurt
- 1 egg, beaten
- 80g feta, crumbled
- Heat the oil in a frying pan, and soften the onion for 8 mins. Turn up the heat, add the mince, and cook for 5 mins to brown all over. Add the seasoning mix and garlic to the pan, cook for 1 minute, then tip in the tomatoes and half a can of water. Stir in the oregano, season well, and simmer for 20 mins. Preheat the oven to 180C.
- Mix the yoghurt, egg and half the feta in a bowl, and season with pepper. Cook the macaroni until al dente in salted boiling water, then drain and spoon half of it into an ovenproof dish. Top with the mince mixture, add the remaining macaroni on top, and press down with the back of a spoon. Spoon the yoghurt mixture over the top, scatter with the remaining feta, and bake for 25 mins until golden. Serve immediately with green salad.
