Greek Roast Pollock
- 400g potato wedges
- 1 sliced onion
- 2 chopped garlic cloves
- ½ tsp dried oregano
- 2 tbsp olive oil
- ½ lemon, cut into wedges
- 2 tomatoes, cut into wedges
- 200g pollock fillets or similar
- Handful of chopped parsley
- Preheat the oven to 200C. Tip the onion, potatoes, garlic, olive oil and oregano into a roasting tin, season well, then toss to combine. Roast for 15 mins, toss everything, then roast for 15 mins more. Add the tomatoes and lemon, roast for a further 10 mins, then top with the pollock and cook for a final 10 mins. Serve with a scattering of parsley, and enjoy.
