Greek Roast Pollock

  • 400g potato wedges
  • 1 sliced onion
  • 2 chopped garlic cloves
  • ½ tsp dried oregano
  • 2 tbsp olive oil
  • ½ lemon, cut into wedges
  • 2 tomatoes, cut into wedges
  • 200g pollock fillets or similar
  • Handful of chopped parsley
  • Preheat the oven to 200C. Tip the onion, potatoes, garlic, olive oil and oregano into a roasting tin, season well, then toss to combine. Roast for 15 mins, toss everything, then roast for 15 mins more. Add the tomatoes and lemon, roast for a further 10 mins, then top with the pollock and cook for a final 10 mins. Serve with a scattering of parsley, and enjoy.
