Green Garden Salad with Apple
- 150g podded fava beans
- 250g shredded white cabbage
- 1 sliced celery stalk
- 3 shredded spring onions
- 1 green apple, thinly sliced
- 150g snow peas, slices
- For the Dressing
- 2 tbsp elderflower syrup (optional)
- 2 tbsp white wine or cider vinegar
- 3 tbsp olive oil
- Blanch the beans for 2 mins in boiling water, then drain and refresh under cold water. Whisk together the dressing ingredients and mix all the ingredients together in a salad bowl. Drizzle with the dressing, toss to combine, and serve as a refreshing side to grilled chicken or at a barbecue.
