Green Garden Salad with Apple

  • 150g podded fava beans
  • 250g shredded white cabbage
  • 1 sliced celery stalk
  • 3 shredded spring onions
  • 1 green apple, thinly sliced
  • 150g snow peas, slices
  • For the Dressing
  • 2 tbsp elderflower syrup (optional)
  • 2 tbsp white wine or cider vinegar
  • 3 tbsp olive oil
  • Blanch the beans for 2 mins in boiling water, then drain and refresh under cold water. Whisk together the dressing ingredients and mix all the ingredients together in a salad bowl. Drizzle with the dressing, toss to combine, and serve as a refreshing side to grilled chicken or at a barbecue.
