Green Pea Hummus

  • 75ml olive oil
  • 2 tsp cumin seeds
  • 2 spring onions, chopped
  • 300g garden peas, boiled for 3 mins
  • 120g cannellini beans from a tin, drained
  • 2 chopped garlic cloves
  • 4 tbsp tahini
  • 2 limes, juice only
  • Heat 75ml of olive oil in a pan and sizzle the cumin seeds for 30 secs. Remove from the heat and leave to stand for 10 mins. Meanwhile, toss the peas, beans, garlic and spring onions in a food processor and pulse to a coarse rubble. Add the tahini, lime juice and 1 tsp of salt, and blitz for 30 seconds more.
  • Trickle the cumin oil into the food processor, with the motor running on medium, and blitz for 3 mins. When smooth, transfer to a bowl and serve with toasted pitta.
