Green Summer Slaw

  • 100g peas
  • 1 small cabbage, shredded
  • 1 zucchini, grated
  • 1 fennel bulb, finely sliced into matchsticks
  • 1 bunch of spring onions, sliced
  • 2 stalks of celery, chopped
  • 1 green apple, grated
  • 1⁄2 lime, juice only
  • 2 tbsp chopped mixed herbs
  • 2 tbsp yoghurt
  • 2 tbsp mayo
  • 1 lemon, zest and juice
  • 1 tbsp fresh mixed herbs
  • Pinch of sugar
  • Bring a pan of slightly salted water to the boil, and add the peas. Cook for a couple of minutes, then drain. Place the peas, cabbage, zucchini, fennel, spring onions, celery stalks, and apple in a large bowl and mix, then add the lime juice and herbs.
  • Make the dressing by mixing all of the ingredients together in a bowl. Toss the dressing into the mixed vegetables, and serve as a side or as part of a picnic spread. Nice!
