Green Summer Slaw
- 100g peas
- 1 small cabbage, shredded
- 1 zucchini, grated
- 1 fennel bulb, finely sliced into matchsticks
- 1 bunch of spring onions, sliced
- 2 stalks of celery, chopped
- 1 green apple, grated
- 1⁄2 lime, juice only
- 2 tbsp chopped mixed herbs
- 2 tbsp yoghurt
- 2 tbsp mayo
- 1 lemon, zest and juice
- 1 tbsp fresh mixed herbs
- Pinch of sugar
- Bring a pan of slightly salted water to the boil, and add the peas. Cook for a couple of minutes, then drain. Place the peas, cabbage, zucchini, fennel, spring onions, celery stalks, and apple in a large bowl and mix, then add the lime juice and herbs.
- Make the dressing by mixing all of the ingredients together in a bowl. Toss the dressing into the mixed vegetables, and serve as a side or as part of a picnic spread. Nice!
