Gremolata Pork Chops

  • 2 pork chops
  • 25g butter
  • 1 tbsp olive oil
  • 2 squashed garlic cloves
  • 180ml white wine
  • For the Gremolata
  • 2 tbsp chopped parsley
  • ½ lemon, zest only
  • 1 chopped garlic clove
  • Season the pork well and fry in the butter and garlic for 3 mins on each side. Reduce the heat to low and cook for 3 mins more, or until the meat is cooked through. Transfer the chops to a warm plate.
  • Add the wine to the pan and deglaze, scraping to get all the flavour from the pan. Bubble for 4 mins to reduce by ⅔.
  • Make the gremolata by mixing the lemon zest, garlic and parsley in a small bowl and seasoning. Spoon the sauce around the pork chops, sprinkle with the gremolata, and serve immediately.
