Gremolata Pork Chops
- 2 pork chops
- 25g butter
- 1 tbsp olive oil
- 2 squashed garlic cloves
- 180ml white wine
- For the Gremolata
- 2 tbsp chopped parsley
- ½ lemon, zest only
- 1 chopped garlic clove
- Season the pork well and fry in the butter and garlic for 3 mins on each side. Reduce the heat to low and cook for 3 mins more, or until the meat is cooked through. Transfer the chops to a warm plate.
- Add the wine to the pan and deglaze, scraping to get all the flavour from the pan. Bubble for 4 mins to reduce by ⅔.
- Make the gremolata by mixing the lemon zest, garlic and parsley in a small bowl and seasoning. Spoon the sauce around the pork chops, sprinkle with the gremolata, and serve immediately.
