Griddled Avocado with Crab and Chorizo

  • 50g diced chorizo
  • Groundnut oil
  • 4 avocados, halved and stoned
  • 180g dressed crab
  • 1 tbsp chopped parsley
  • Fry the chorizo with 2 tbsp of oil until crispy and the oil is red. Brush the cut sides of the avocado with some oil, then griddle until char-lined. Place the avocados on a platter, spoon the dressed crabmeat over the top and then scatter with diced chorizo and a drizzle of the chorizo oil. Scatter with parsley and serve.
