Griddled Lamb and Vegetables Recipe

What you'll need

For the lamb

  • 1 x 200g lamb chop
  • 2 garlic cloves, chopped
  • 3 sprigs of thyme, leaves only
  • 1 tbsp olive oil

For the vegetables

  • ½ Jerusalem artichoke, peeled and cut into chips
  • 1 stalk of broccoli, chopped into florets
  • 1 tbsp olive oil
  • Lemon wedge, to garnish

Time: 30 mins

Serves: 1


Method

First

Place the lamb chop in a bowl, and cover with the olive oil, garlic, and thyme. Season well with salt and pepper, and leave to marinate for a few minutes.

Second

Heat a griddle pan or barbecue, and cook the chop for 4-5 minutes on each side (or to your liking). Set aside to rest while you do the veggies.

Third

In another bowl stir the artichoke chips and broccoli with the olive oil until well coated. Season, then griddle on the same hot griddle (hopefully nicely coated in lamb juices) until cooked through. Serve hot on a plate, dressed with lemon, and alongside the rested lamb chop.
