Grilled Halibut with Avocado Salsa

  • 1 avocado, chopped
  • 2 chopped tomatoes
  • 1 sliced red onion
  • 3 tbsp olive oil
  • 1 lime, juice only
  • Small bunch of chopped coriander leaves
  • 2 x 150g halibut fillets, skin on
  • Mix all the ingredients except the fish in a bowl, and set aside. Heat a griddle pan until very hot, and season the fish fillets with salt and pepper and rub with olive oil. Griddle for 3 mins on each side, or until cooked through and char-lined. Serve with a heap of the avocado salad and some lime wedges for squeezing.
