Grilled Halibut with Avocado Salsa
- 1 avocado, chopped
- 2 chopped tomatoes
- 1 sliced red onion
- 3 tbsp olive oil
- 1 lime, juice only
- Small bunch of chopped coriander leaves
- 2 x 150g halibut fillets, skin on
- Mix all the ingredients except the fish in a bowl, and set aside. Heat a griddle pan until very hot, and season the fish fillets with salt and pepper and rub with olive oil. Griddle for 3 mins on each side, or until cooked through and char-lined. Serve with a heap of the avocado salad and some lime wedges for squeezing.
