Grilled Peaches with Caramel Almonds

  • 15g butter
  • 30g caster sugar
  • 10g honey
  • 15g almond flakes
  • Pinch of sea salt
  • 3 tbsp double cream
  • 4 peach halves
  • Mix the butter, sugar and honey together in a saucepan, and gently simmer for 8 mins until it turns a deep caramel colour. Add the almonds and a pinch of salt, and cook for a couple of mins. Take off the heat, stir in the double cream and combine until pourable. Set aside.
  • Griddle the peach halves until just charred - about 5 mins should do the trick. Serve the grilled peaches with the caramel sauce, and enjoy.
