Grilled Steak with Portobello Sauce
- 100g sirloin steak
- 1 tbsp olive oil
- For the Sauce
- 25g butter
- 1 tbsp olive oil
- 1⁄4 red onion, chopped
- 1 chopped garlic clove
- 1 portobello mushroom, sliced
- 50ml red wine
- 50ml beef stock
- 1 tsp fresh parsley, chopped
- Salt and pepper
- Heat up a griddle pan until smoking, and rub the steak with oil. Season liberally, and chargrill for 3-4 minutes on each side, or to your liking. Remove and leave to rest for 3 minutes.
- Make the sauce by melting the butter and oil in a frying pan. Add the garlic and onions and cook to soften. Add the mushrooms, and cook for a couple of minutes, then tip in the wine and beef stock and bring to a boil. Simmer until reduced and thickened, then add the parsley and stir. Serve the steak on a plate, with the sauce spooned all around.
