Grilled Steak with Wild Mushroom Topping
- 1 tbsp olive oil
- 2 quality sirloin steaks or similar
- For the Mushrooms
- 25g butter
- 100g wild mushrooms, chopped
- 1 chopped garlic clove
- Small handful of mixed parsley, chives, and tarragon, chopped
- 1 tbsp crème fraîche
- 1 egg yolk
- 25g grated parmesan
- Make your topping by heating the butter in a frying pan, then tipping in mushrooms to fry until softened. Add the garlic, cook for a minute, then tip the mixture into a bowl and combine with the rest of the ingredients.
- Heat your grill to high, and heat the oil in a frying pan until very hot. Sear the steaks for a minute on each side (for rare), then spread the topping over them and stick under the grill for 3-4 minutes, or until bubbling, golden, and cooked to your liking.
