Grilled Zucchini and Herb Salad

  • 6 zucchini, trimmed and cut into long strips
  • 2 tbsp olive oil
  • 1 red chilli, deseeded and finely chopped
  • ½ lemon, juice only
  • Chopped mint and basil
  • Toss the zucchini strips in a bowl with the oil to coat, then mix in the chilli and some salt and pepper. Griddle the zucchini for about 4 mins on each side or until tender and char-lined. Drain on kitchen paper.
  • Toss the griddled zucchini in the lemon juice and chopped herbs, and serve with a slug of quality olive oil.
