Grilled Zucchini Salad
- 6 zucchinis, ends trimmed, sliced into long strips
- 2 tbsp olive oil
- 1 red chilli, chopped
- Salt and pepper
- ½ lemon, juice only
- Handful of chopped mint
- Handful of chopped basil
- Toss the zucchini strips in a bowl with the oil, and mix with the chilli and plenty of seasoning. Heat up a griddle pan until smoking, and griddle the zucchini in batches. You want them nice and tender, and with clear char-marks.
- Toss the zucchini in a bowl with the lemon juice and herbs, and another good slug of olive oil. Serve immediately.
