Grilled Zucchini Salad

  • 6 zucchinis, ends trimmed, sliced into long strips
  • 2 tbsp olive oil
  • 1 red chilli, chopped
  • Salt and pepper
  • ½ lemon, juice only
  • Handful of chopped mint
  • Handful of chopped basil
  • Toss the zucchini strips in a bowl with the oil, and mix with the chilli and plenty of seasoning. Heat up a griddle pan until smoking, and griddle the zucchini in batches. You want them nice and tender, and with clear char-marks.
  • Toss the zucchini in a bowl with the lemon juice and herbs, and another good slug of olive oil. Serve immediately.
