Hake and Shellfish Portuguese Stew

  • 2 tbsp oil
  • 1 sliced onion
  • 250g salad potatoes, chopped
  • 1 red pepper, chopped
  • 1 courgette, sliced
  • 2 tomatoes, chopped
  • 2 grated garlic cloves
  • 1 tbsp white wine vinegar
  • 2 tsp veg stock powder
  • 2 hake fillets, skin removed
  • 150g frozen mixed shellfish
  • 60g prawns, peeled
  • Parsley, chopped
  • Fry the onions and potatoes in a little oil, in a lidded pan, for about 5 mins. Add the courgettes, tomatoes, peppers, and garlic, and stir in the stock powder, vinegar, and 200ml of water. Bring to a simmer, and cover to cook for 25 mins.
  • Add the fish fillets to the pan along with the seafood and prawns, and cook covered for 5 mins more. Scatter with parsley, and serve with crusty bread.
