Halloumi and Orange Salad
- 2 oranges
- 1.5 tbsp wholegrain mustard
- 1.5 tsp honey
- 1 tbsp white wine vinegar
- 3 tbsp olive oil
- 2 carrots, peeled
- 225g halloumi, sliced
- 100g baby spinach leaves
- Cut away the peel and pith of the oranges, then segment with a knife (catching the juices in a bowl). Add the mustard, vinegar, oil, and honey - along with some seasoning - to the bowl, and mix well.
- Peel the carrots into ribbons with a veg peeler, and toss in the dressing bowl. Heat a drizzle of oil in a griddle pan, and griddle the halloumi slices until char-marks are visible and golden. Toss the spinach through the dressed carrots, then arrange the salad on a plate and top with the griddled cheese and orange segments.
