Halloumi and Orange Salad

  • 2 oranges
  • 1.5 tbsp wholegrain mustard
  • 1.5 tsp honey
  • 1 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 2 carrots, peeled
  • 225g halloumi, sliced
  • 100g baby spinach leaves
  • Cut away the peel and pith of the oranges, then segment with a knife (catching the juices in a bowl). Add the mustard, vinegar, oil, and honey - along with some seasoning - to the bowl, and mix well.
  • Peel the carrots into ribbons with a veg peeler, and toss in the dressing bowl. Heat a drizzle of oil in a griddle pan, and griddle the halloumi slices until char-marks are visible and golden. Toss the spinach through the dressed carrots, then arrange the salad on a plate and top with the griddled cheese and orange segments.
