Halloumi and Spicy Cauliflower Rice

  • 500g cauliflower florets
  • 150g baby spinach
  • 1 tbsp olive oil
  • 1 red onion, sliced
  • 120g halloumi cubes
  • 1 crushed garlic clove
  • 1 thumb-sized piece of ginger, grated
  • 1 tsp ground turmeric
  • 1 tbsp curry powder
  • 500g cooked brown basmati rice
  • 1 red chilli, sliced
  • Boil the cauliflower for 5 mins in salted water, and add the spinach for the final 2 mins. Drain, and set aside. Heat up the oil in a large frying pan, and fry the onion for 5 mins. Add the halloumi, cook for 5 mins more, then tip in the garlic, ginger, curry powder, and turmeric. Stir through the rice, cauliflower and spinach, heat everything through, then serve with a sprinkle of salt and the chopped chilli on top.
