Ham and Blue Cheese Filo Tart
- 6 sheets of large-size filo pastry
- 1 tbsp olive oil
- 100g chopped ham
- 1 bunch of spring onions, sliced
- 2 eggs, beaten
- 300g soft cheese
- 2 handfuls of rocket
- 100g stilton, crumbled
- 2 tbsp pine nuts
- Preheat the oven to 180C. Brush the filo sheets with a little oil, and layer into a springform tin (20cm), overlapping the sheets at an angle. Mix the ham, onions, eggs, soft cheese and rocket, and pour the lot into the filo case. Sprinkle with blue cheese and pine nuts, and bake for 30 mins. Leave to cool a little, and serve warm.
