Ham, Cheese and Broccoli Conchiglie
- 300g conchiglie pasta
- 1 broccoli head, cut into small florets
- 1 tbsp olive oil
- 1 chopped onion
- 2 crushed garlic cloves
- 250g ham, cut into chunks
- 300ml double cream
- 1 tbsp mustard
- 150g grated mature cheddar cheese
- Cook the pasta in a large pan of boiling salted water until al dente, adding the broccoli pieces to the pan for the last 4 mins or so. Drain and set aside.
- Heat the oil in a frying pan and cook the onion for 5 mins to soften. Stir in the garlic and cook for a minute more, then stir in the cream, mustard and ham, and bring to a simmer. Stir in the pasta and the broccoli, followed by the grated cheese, mixing well to coat the pasta in the sauce. Season and serve immediately.
