Ham Hock Burgers

  • 2 tbsp mayo
  • 2 tsp wholegrain mustard
  • 1 tsp ketchup
  • 1 tsp honey
  • 3 tbsp white wine vinegar
  • 1⁄2 shredded fennel bulb
  • 1 green apple, grated
  • 1⁄2 small pointed cabbage, chopped
  • 4 burger buns
  • 180g cooked ham hock or similar, thickly shredded
  • Mix the mayo and mustard in a small bowl and set aside. In a mixing bowl, combine the ham, ketchup, 1 tbsp of vinegar and the honey until mixed.
  • Make the slaw by mixing the fennel, cabbage, and apple in a bowl with the remaining vinegar. Assemble the burgers by spreading the mustard mayo onto the toasted buns, piling in the shredded ham, then topping with the slaw. Serve immediately.
