Ham, Onion, and Gorgonzola Tart
- 3 sheets of pre-made filo pastry
- 50g melted butter
- 1 tbsp olive oil
- 1⁄2 red onion, thinly sliced
- 2 slices of parma ham, chopped
- 75g gorgonzola, cubed
- Handful of fresh basil
- Preheat your oven to 180C. Brush your filo sheets with melted butter, and layer them into a small tart tin on some baking paper. Stick in the oven, and cook for about 5 minutes until crisp and golden. Remove, and set aside.
- Fry the onion in some olive oil for 4-5 minutes, then spoon into the pastry case. Top with the cheese, the ham, and the basil, and bake in the oven for 6 minutes or until the cheese is melted and bubbly. Serve with a fresh salad or some green veg.
- For the perfect wine pairing, crack open a bottle of the savoury and floural Beautiful Isle Pinot Noir 2016. This is a versatile wine that goes well with creamy cheeses such as Gorgonzola! Yum!
