Healthy Beef Stew

  • 4 tbsp veg oil
  • 900g lean diced beef stewing steak
  • 2 chopped onion
  • 2 tbsp paprika
  • 1 crushed garlic clove
  • 1 jar of tomato and garlic pasta sauce
  • ½ beef stock cube
  • 2 red peppers, cut into chunks
  • 250g halved button mushrooms
  • 1 sweet potato, cut into chunks
  • Heat the oil in a large frying pan and fry the beef until just browned. Remove and place into a casserole. Add the onions to the pan and cook for 5 mins, then stir in the paprika and garlic and cook for a minute more.
  • Pour in the tomato sauce, along with a jar-full of hot water. Stir in the stock cube, peppers, mushrooms and sweet potato, then simmer for 1 hour, or until the meat is very tender. Serve with soured cream and your choice of greens.
