Healthy Turkey-Stuffed Capsicums
- 2 red capsicums
- 1.5 tbsp olive oil
- 250g turkey mince
- ½ onion, chopped
- 1 grated garlic clove
- 1 tsp ground cumin
- 3 sliced mushrooms
- 400g tin of chopped tomatoes
- 1 tbsp tomato paste
- 1 chicken stock cube
- 60g grated mozzarella
- Handful of oregano leaves
- Preheat the oven to 190C. Halve the capsicums lengthways and remove the seeds and core. Rub with oil, season well, and roast for 15 mins. Meanwhile, fry the mince in a little oil for 3 mins, then tip onto a plate. Fry the onion and garlic for 3 mins, then mix in the mushrooms and cumin and fry for 3 mins more.
- Tip the mince back into the pan and add the tomato paste and chopped tomatoes. Crumble in the stock cube, cook for 4 mins, then season and add the oregano. Remove the capsicums from the oven and stuff with the mince mixture, before topping with cheese and cooking for 15 mins. Serve with greens, and enjoy.
