Herb Crusted Lamb Cutlets

  • 4 lamb cutlets
  • Olive oil
  • 1 slice of toasted bread
  • Handful each of parsley, mint, and basil, chopped
  • 30g grated parmesan
  • Salt and pepper
  • Preheat the grill to high. Tip all of the ingredients, minus the lamb, into a food processor and blitz to make a crust.
  • Lightly drizzle the lamb with olive oil, and season well with salt and pepper. Stick under the grill for 4-5 minutes, turning once, or until cooked to your liking. Serve scattered with the fresh herb crust and some quality bread.
