Herby Beef with Bean Salad
- 100g beef fillet
- 1 tbsp olive oil
- Salt and pepper
- 1 tbsp chopped chervil
- 1 tbsp chopped parsley
- 50g fresh breadcrumbs
- 1 tbsp olive oil
- 1⁄2 lemon, zest and juice
- 75g tin of borlotti beans, drained
- Handful of fresh parsley
- Salt and pepper
- Preheat the oven to 200C. Rub the beef well with olive oil and plenty of salt and pepper, and place the herbs and breadcrumbs together in a bowl, and combine. Coat the beef fillet in the herbed breadcrumbs, then fry the beef in a little more olive oil for a few minutes on each side.
- Transfer the beef to the oven, and cook for 4-5 minutes, or until done to your liking. Meanwhile, make the salad by mixing together all of the ingredients in a bowl, and seasoning to taste. Serve the beef on a bed of salad, and enjoy.
