Herby Couscous with Green Beans
- 250g couscous
- 150ml veg stock
- 2 tbsp olive oil
- 250g green beans, blanched and chopped
- 1 lemon, juice only
- 2 tbsp chopped parsley
- 2 tomatoes, deseeded and chopped
- Salt and pepper
- Pop the couscous in a heatproof bowl, pour over the stock and olive oil, and leave to stand for 5 minutes. Fluff with a fork, and then add the beans, tomatoes, parsley, and lemon juice to the couscous, before seasoning liberally and stirring again. Serve alongside your favourite vegetarian tapas or salads.
