Herby Couscous with Green Beans

  • 250g couscous
  • 150ml veg stock
  • 2 tbsp olive oil
  • 250g green beans, blanched and chopped
  • 1 lemon, juice only
  • 2 tbsp chopped parsley
  • 2 tomatoes, deseeded and chopped
  • Salt and pepper
  • Pop the couscous in a heatproof bowl, pour over the stock and olive oil, and leave to stand for 5 minutes. Fluff with a fork, and then add the beans, tomatoes, parsley, and lemon juice to the couscous, before seasoning liberally and stirring again. Serve alongside your favourite vegetarian tapas or salads.
