Hoisin Glazed Ham
- 2-3kg ready-cooked ham
- 15 star anise
- 125ml hoisin sauce
- 125ml plum sauce
- 60ml Chinese rice wine
- 60ml soy sauce
- 60g brown sugar
- 1 tsp Chinese
- 5 spice powder
- Preheat your oven to 180C. With a sharp knife, remove the rind from the ham, then score the white fat in a diamond pattern and press a star anise into every second or third diamond. Place the whole ham onto a rack over a roasting tray, and pour a few splashes of water into the tray.
- Place all of the remaining ingredients into a small saucepan over a low heat, and allow the sugar to dissolve. Carefully pour your glaze all over the ham, then transfer to the oven for 40 minutes, basting regularly, until the ham is golden. Serve sliced with your favourite sides.
